To start, I am a citizen of Japan and the U.S. As my mother is an immigrant from Japan and my father is an American. I've lived in America all my life but have visited Japan to see family for at most two months a year. Due to recent complications, my family is deciding to move to Fukuoka again which is leading me to need to learn how to read and write in Japanese but also look for a school. It would most likely be an international university as I'm not comfortable enough with my japanese to be going to a fully japanese uni..
My boyfriend (fully American) is ideally coming with me as well to Fukuoka so he would need to learn Japanese as well as apply for a Uni as well.
I am wondering what steps I need to take to get into these universities, what I would need to do to get a job in Japan, and how apartments would work.
For jobs, I would most likely be looking for a barista job as that is what I'm doing currently and I enjoy it very much. And for the apartment problem, I do know that there are japanese only apartments available but would those restrictions still apply to me even though I am half?? I'm assuming it's up to the landlord but I'm curious to know if I'd be restricted to the average foreigner rules. Also how possible is it to live off of one income in Japan but for two people?

For university I recommend searching up ones with english programs and then their site will provide the information you need
As for apartments since you are a Japanese citizen with family in Japan that can be your guarantor you shouldn’t have issues renting. Although I recommend having a Japanese family member help through the initial renting process so it goes smoothly
Part time work such as a barista probably won’t require you to have a JLPT certificate so working part time won’t be an issue and you won’t have work restrictions since you are a citizen
And 2 people living off of one income from part time work is not going to be feasible
