I had this sashimi dinner and the escolar looked unusual enough that I wasn’t sure what it was and had to ask. It looks like they used some sort of tataki or yubiki technique, but I also think it could have just been a bit dry/aged/oxidized. It smelled and tasted normal, but the outside ring was slightly more firm. For the record, everything there is consistently delicious.
Any thoughts?
