Booking train travel for 2 Weeks in Japan with a 9 month old

This will be our first family trip of more than a few days and is essentially a delayed honeymoon as life pushed things back. We have booked accommodation and will be spending a further week in South Korea directly after this. Open to advice and recommendations. However, my main question is would it be worth buying the recommended the Kansai Hokoriku Area Rail Pass as it is only for 7 days and we would need two or just booking individual train tickets when we get there. It doesn't seem to be particularly busy when we are travelling from my research so I am inclined to just book everything for travel when we arrive in Tokyo.

We have purposefully kept the itinerary simple and fairly flexible we enjoy experienceing local culture, food, nature and will plan to go to food markets, parks, temples and activities which don't require a strict schedule. As it will be hot we might try a shopping mall or a few indoor experiences like exhibitions and museums. We are not being lazy we have done alot of research but with a 9 month old rigid schedules and packed itinaries are not very practical. I plan to take a baby carrier and use the babycal app to hire a buggy in Tokyo and Kyoto as needed. We will also use some public transport in Kyoto and Tokyo but I am not sure if this is likely to justify the cost of the pass.

Day 1 – 4

Arrive in Tokyo (very late)
Stay in Tokyo for 4 nights (recover from jet lag and explore city)

Day 5 – 6

Take Hokoriku Shinkansen to Kanazawa (need to book) stay 2 nights
Explore temples and historical sites

Day 7 – 12

Take local train line to kyoto
Stay in kyoto 6 nights in a traditional room
(explore city maybe take a few day trips)

Day 13
Train to kinosaki Onsen one night enjoy Onsen experience at a family friendly accommodation with private onsens

Day 14

Travel to Osaka, accommodation close to Itami Airport

Day 15
Travel to Seoul
