Rate/roast my 8 day Tokyo itinerary

Hi all, I'm travelling to Tokyo for 8 days (7 days realistically) with my dad in September and wanted to get your thoughts and opinions on our itinerary. It's my second time there, the first time being in 2017. I'm personally a big nerd, while my dad enjoys the food and culture.

The itinerary isn't set in stone in terms of times. I've listed the places I know I want to go, but I enjoy just walking around and discovering places when I'm there.

I don't really have restaurants picked, I was gonna search the areas we're at with Tabelog when we're there. But I'm always open to recommendations!
