First half of October in Japan, 14 days. First time

Feeling absolutely overwhelmed. I booked my flight and have been planning non-stop but the more I learn the more indecisive I become.

Im starting in Asakusa, 3 nights, exploring that side of tokyo,

Then I'd like to go to Nikko and see waterfalls, the shrines in the cliffs,

But the snow monkeys in Nagano? The wasabi farm in Matsumoto?

I hoped to make it over to Osaka and go to the aquarium, maybe a day trip to Kyoto,

Stop in Hakone and or Kamakura/Enoshima before I head back to Tokyo for the airport.

I really want to see some nature, I work outside and I love exploring new environments. On that same coin, any Volcanic activity would be exciting to see. Im not super into shopping, but I am into eating. I'd love to visit any sort of brewing facility that isnt beer, sake, soy sauce shochu, or an agricultural farm tour.

Any recommendations on what you would do? or how to narrow it down?
