Private chef and teacher wanted

Hi all, I am looking forward a certified private chef in Osaka ( JCI, JCA or similar) from the 13 to the 19 October.
I am a professional, owner of a restaurant in Italy and seeking to learn the fundamental tecniques as dashi, tonkotsu, fish preparation, marinade, pickling, etc
