My GF(28) and I(31) from Italy had a 5 day trip from South to North of the Island and had a wonderful time.
Having lived in Japan for 11 years as a kid I always wanted to visit and must say it was a great experience.
Some highlites;
The monorail of Naha was so convenient.
The amount of large shopping centers and Konbinis make it a dream for snacks and eating local.
Food was amazing aside from the quite frankly horrendous American Taco influence which we tried once and was so bad we were wondering why they added this to japanese and Okinawa local food considering how good it us but then remembered the huge USA military influence so I guess makes sense. Perhaps it's our italian stuckupness for food but I think it's a fair assessment.
Renting a Car was super easy and made visiting Naha, Onna, Nago, kuri Island so easy.
Beaches were amazing.
Honestly we can't wait to visit again!

Had a similar experience. Wanted to try a tropical harness island. Reminds me of Hawaii but distinctively Japanese. Love it and can’t wait to go back.

Taco Rice?
There is a Italian restaurant in around Naha called George’s. The taco’s there were insanely good but I agree that the taco Rice is kinda bland and really not that recommendable.
