Just wanted to share some of the pictures from an amazing event this weeked at Knifewear in Toronto. Project Umami came out, with a large chuck of amazing Bluefin that was caught and cut fresh. They provided a spectacular demonstration of how to properly cut up something as amazing as that tuna, and we all get samples of the akami, chu-toro, and o-toro. It was a spectacular demonstration! They also sliced up some Yellowfin to taste and feel the difference. This was the first time that I've ever had tuna so fresh that it was swimming just a couple days before! The taste and feel was absolutely spectacular. My gratitude for Knifewear and Project Umami for hosting such a great event!!
