
Approximately the title. Long time sushi lover/consumer here. Potentially either ashamed or lucky to say I’ve never seen something like this in any cut or variety of sushi/sashimi. This is simple Salmon Nigiri.
Did all little research, leaning towards vein/clot..or potentially what is named “Melanised Focal Change”? Curious to hear what you guys think!
