Because they did not trim the bloodline. In the US, it is customarily removed but in many other places around the world, yellowtail is served with the bloodline. The red colour can be even darker and richer:
The silver is just a result of the skin being sloppily stripped, also normal.
I find yellowtail to be kinda meh because it can either be amazingly mellow or quite fishy because of the bloodline. More dark red = fishier.
I like fishier fish and mellow fish, I just want one or the other. It so often is served where one piece is buttery and mild and the next bite is like eating mackerel. My tongue can’t handle that switcheroo.
