Tokyo, Kanazawa, Kyoto (February/March): Tips for authentic experiences?

I'll be in Japan between mid-February and early March. Stops: Tokyo, Kanazawa, and Kyoto. I'm looking exclusively for authentic, non-touristy experiences. Do you have any off-the-beaten-path suggestions for this period? Thanks!
