AU pay is a payment app (like PayPay) and the money comes from ponta points, or you can “charge” it like an IC card. You pay with a barcode.
AU kantan kessai puts the payment on your next phone bill, so it will be charged to whatever credit card you usually pay your phone and internet bill with.
