Can I sponsor my self to get a spouse visa for the COE?

Greetings. I am a fellow from Brazil and my wife is Japanese, we being together for 5 years and we work in cruise ships, we are reaching our 30s and soon the idea of settle of course is coming to our minds. After being several times in Japan and don't finding my self fitting in Brazil anymore, I decided I will settle in Japan with her, specially cause like that she can be closer to her family.

I got in contact with embassy to know more details about the spouse/permanent residency and they sent me the website link how to apply, apparently my wife would need to apply from Japan for the COE.

My concerns are if they ask proof of earnings, I do have my payroll from the cruise line and I make around 5k a month and she around 2.7k. But we do not pay taxes either in Brazil or Japan since we don't work in either countries and our vacations are short. I have also 50k usd saved in my bank in Brazil.

My plans are to settle in Japan in the next 3 year, but I decided is better to start the application now in order to get the visa specially If I want to buy a house and get a loan from the bank.

From what I understood from the embassy guy, she would need to apply in Japan for the COE and then I submit in Brazil to get the visa. But I am planning to spend 30 days in Japan my next vacations, can it be done also directly in Japan?
When fill up those paper work, can I be my own sponsor? Any idea If I will have difficulties?

Any suggestions or tips? I really appreciate it guys. My only concern is since we don't have a "fix land job" they would not accept our incomes.
