Competitive JET application

Hi all. I'm a college freshman currently enrolled in a CELTA course with Teaching House. After I earn my bachelor's, I wish to apply to the JET program. In these next four years, I want to make myself competitive enough to have a shot at one of the popular prefectures.

I'm pretty resolute with this goal. I started studying Japanese my freshman year of high school and am currently hovering somewhere around low N2 (doubtful), high N3; i.e. I can hold a conversation for a few hours and use a monolingual dictionary. I'm also pretty interested in Japanese literature, too–I've read a decent amount of all the well known authors.

I was thinking of including the above information in my JET application + obviously the CELTA and maybe some volunteer teaching (my school has a pretty robust ESL program, and I also genuinely enjoy teaching). However, I am not majoring in a subject relevant to the JET program (STEM major). From what I've seen, this is a slight drawback. Are there any programs/activities that I can do to bolster my resume? I know I have a lot of time, but I just wanted to gain some potential direction.

Side note: I also don't want to do this solely for admissions purposes, so anything that's just generally enriching and useful is welcome!
