Best spots in Okinawa for outdoor activities

I'm planning a trip in November with a friend, from what I've read this seems to be a pretty good time of year weather-wise.

I spent 6 weeks in Japan back in 2019 and I loved immersing myself in the culture as much as possible. We did some workaways, so we got to spend some time in more local areas, did some permaculture gardening, a lot of hiking, exploring, eating and trying to see as much as possible. We didn't make it down to Okinawa on the last trip and I'm excited to experience the area. I love snorkeling and kayaking and heard it's a great place for that.

I'd love to hear recommendations for the best places to stay, best spots for outdoor activities, and also any recommendations on food, arts, music or whatever some young-at-heart 40 year old adventurous women may have. We are both pretty active, love music and art, and appreciate a good meal but also love keeping it simple, and not looking for the "nicest resort" Or "fanciest restaurant" type of situation. I really appreciate connecting with the local community more than getting the photo of the top tourist spot for the 'gram.
