I missed taking pictures of a couple courses, but here we have:
-Chilled sawara (Spanish mackeral), octopus, and sawagani (Japanese river crab) with microgreens and edible flowers. I ate the crab whole. He was delicious.
-I don't remember the name of the fish on the bottom nigiri, but I believe the rest from the bottom were fatty salmon, fatty tuna, and uni. Loooooved the salmon roe and caviar on top.
-Temaki that I'm pretty sure was filled with minced fatty tuna and caviar.
-The best miso I've ever had, with teeny tiny mushrooms.
-An almost cannoli-esque corn dessert, topped with crunchy cornflake-like clusters and chili threads. It tasted sort of like cornflakes, but like…if the cornflakes were served over custard and cream and shortbread. Elevated cornflakes. It was so good.
Restaurant is Kumoya in Denver, CO! I will absolutely be going again; they had an incredible sake collection on top of all this amazing fish, as well as Studio Ghibli-inspired cocktails. 😍
