Where to stay on Honshu for a month?

My husband and I are spending October, November, and December in Japan.

We'll be spending two weeks at the start doing a road trip and then spending December in Tokyo.

We're looking for a town or city to spend November. I don't think we want to do a big city since we're spending a month in Tokyo, but am open to being convinced.

Otherwise, looking for a mid-size or smaller city a bit off the beaten tourist path, but still with things to do. We especially enjoy biking, hiking, etc. I also enjoy photography so am looking for somewhere at least moderately photogenic.
