Years ago, I entered an amateur sushi competition where we were given less than an hour to create a plate of sushi for several judges to see, taste, and grade. While everyone else presented mundane plates of sushi that they learned how to make in our sushi-making classes (round, square, triangle maki shapes), I went the extra step and studied some of the sushi designs that the masters made. The one on the upper left is "stained glass sushi" designed by Morimoto. Mine is not as precise as his but I feel it was a great first attempt at it. I also came up with the idea of roses inside hearts in the maki on the upper right. Finally, I came up with the concept of "sushi fruit," where each roe-covered color ball represented (roughly) what was stuffed inside it: red for tuna, orange for salmon, and black for avocade (we weren't provided any green roe so I chose to stuff the black one with avocado). I won that competition against several professional chefs, some of whom went on to become full-fledged sushi chefs. Hope everyone likes my plate! 🙂
