Ideas for second trip: Kanazawa, Matsumoto, Sendai…?

Planning my second trip to Japan at the end of October and I’ll only have about a week. I’ll be flying in and out of Tokyo (not sure which airport yet).

First time around I did Tokyo, Hakone, Kyoto, Osaka, Nara, Hiroshima and Miyajima. This time I don’t really want to do Tokyo again, maybe just a day at the end before flying out.

I’m looking for ideas on where to go and how to split the week. I’ve heard good things about Kanazawa (maybe with a side trip to the Noto peninsula) and using Matsumoto as a base for the Japanese Alps. I’m into traditional cities (loved Kyoto), seafood, onsen, and I’d love to catch the autumn foliage.

Would 3 nights Kanazawa + 3 nights Matsumoto work, or should I add the extra night I have to one of them? Or maybe spend it somewhere else entirely? Also open to other suggestions within ~4 hours of Tokyo, like Sendai or other spots in Tohoku.
