First time with some fresh mangrove snapper that immediately underwent ikejime, was bled, then placed in a salt water ice slurry(I'm aware of the risks of not freezing). I know the nigiri kind of looks like trash, but it tasted great.
Next time around, I think I'm gonna reduce the amount of vinegar added to the rice(just a touch too much flavor) and definitely add a bit more fish/ reduce the amount of rice in the roll.
Any tips or constructive criticism are super welcome.
