Son wanted birthday sushi, I may have overdone it

This was all hand made by me. I think there’s 15+ rolls? I wasn’t counting. It was to be dinner for 6, but we had so much we ate it again the next day.

I’d love any pointers on seasoning the rice! It tastes fine, but not quite right. I’ve tried heating unseasoned vinegar with sugar and salt and also using preseasoned vinegar. Maybe I’m not using enough? Maybe I put it on at the wrong time?

  3. It really is just vinegar, sugar, and salt. If you think it’s lacking, kombu is an optional ingredient I’ve seen. I don’t think you can really screw it up, when the rice is done you add it in evenly while hot/warm. If it’s still not right tweak the original 3 ingredients to your personal liking at that point it’s more about your preference than a misunderstanding on how to prepare it.

  5. That’s an awesome assortment and it looks really good!
    I did this for my daughter’s birthday once, too.
    I was having like 10 people over and I spent all night making sushi, then I feared it wasn’t enough so I made another batch of rice at like 1am and kept going.
    It was enough to send everyone home with like 2 rolls and I was eating it for 2 more days. Lol.

  6. I really like this type of sushi rice vinegar: Hayashi Koutaro Zousu Vinegar Rice Kyo Amari. If you are going to try and make the balance of ingredients yourself, as you did here, I’d recommend looking at the ingredients used in some of these premade options. You’d be surprised to see all the unique ingredients they add to give it that distinct flavor.

  7. You need a ridiculous amount of rice vinegar ngl. The instructions for preseasoned under shoot the required amount by quite a bit
