
My understanding is that "sushi grade" is just a marketing term and not actually legally regulated and what you really want is fish that has been flash frozen to kill parasites?

I found this fish which is "snap frozen" (I believe that's just another word for flash frozen?). It comes from farmed salmon as well which is also supposed to be less likely to have parasites. But it says "product must be fully cooked before eating". Is that just to avoid liability or is it actually likely to have parasites?
It's much more affordable than fish marketed as sushi grade but I feel like I must be missing something here and I don't want to get sick.
