Went to my first omakase last weekend, and wow. Just wow. Every course was unbelievable. I got the counter seating which serves 11, the “menu” in the post is made from my photos and notes. The toro progression was an amazing build up and I felt it paced the meal well. The A5 Wagyu/uni/caviar was so rich and not traditional, but even that really fit and didn’t feel gimmicky. The chefs and staff were so engaging and had answers to all of our questions. I had a Japanese sake, beer, and whiskey during my meal, all picked by the staff, and their choices were great. Highly recommend this place if you’re in/visiting the Seattle area.
