Itinerary check for 15-night adventure starting on Sunday

We're leaving on Sunday for our great Japan adventure that we had initially booked as a honeymoon in 2020 but was canceled by the pandemic. I've been planning for months, and I know it's ambitious, but I hope it's realistic and fun. We will cut activities if we're getting exhausted, but I hope we can do most of this.
