
This was served at my first omakase ever. However, I couldn’t quite catch what the sushi chef said when he told me the fish.
Afterwards, I even tried searching up pictures for all the nigiri options listed on the à la carte menu, but none seemed to match up.

That looks like shrimp of some kind?
Maybe sweet shrimp?
Possibly amaebi (sweet shrimp)
Amaebi w/o tail. Lightly brushed, it looks like, in probably soy or ponzu.

It is missing the fried shrimp head! That is the best part!

Botan ebi or aka ebi, too big for amaebi.
Shirako
Looks like Hokkaido amaebi (sweet shrimp from Hokkaido, Japan). They’re much smaller so you’ll typically see 2-3 shrimp per nigiri
What restaurant is this, it does sort of look like Shirako, but outside of Asia that is pretty unlikely, so my guess would then be botan ebi or some such. But shrimp is usually more translucent.
Some manner of spot prawn. Ama ebi, botan ebi, there are a couple of others but those are the ones I’ve eaten. They are caught in deep oceanic waters, below the range common parasites operate in. Love them, and my preferred preparation involves deep frying the head (done right, it becomes deliciously crispy along with that nice shrimp flavor, the head is the tastiest part though the texture of the raw flesh is awesome).

Maybe Amaebi or button ebi.
It is shrimp you can eat row.
And looks like zuke ( zuke means the marinaded with soy sauce)
It is common style in Japanese foods.
