Late Spring 2027 17 day trip Itinerary

I am in the early stages of planning my trip to Japan with my two children, who will be 8 and 11 at the time. The trip is mostly kid-focused, but still hoping to get a full Japan experience. I don't want to burn the kids out with too much planned each day. Additionally, I want to be flexible should booking ticket plans fall through or if we are just too tired for the day.
