What is this exactly?

sorry if this is the wrong subreddit for this, I just thought this would be a good place to ask. I obviously know it's salmon, but why does it look like this?

  1. Salmon belly. They just way over scored it. I’ve definitely noticed a trend of pics on here with over scored fish but this is extreme

  4. you’re posting sushi questions on sushi sub, why would it be wrong?

    the piece with vertical slits cut into it has been sliced that way to make it easier to eat. it has the silvery white parts because the skin hasn’t been removed completely. the whitish part is that fat between the muscle and the skin.

    typically you see this kind of treatment with belly part of salmon
