So I’m currently working on renewing my 1 year spouse visa and I’m having trouble finding where to submit the documents. From my research MOJ wasn’t clear at all on where to submit the application. Would it be the regional immigration office for our prefecture? Also, for those who were approved, from the time you submitted the application when did you receive the renewed visa? I figured there are a lot of similar situations on this subreddit and would appreciate any advice on how best to proceed.

Yes.. your regional immigration office. For me, each spouse visa took 2-3 months to process but, while processing, my current visa was extended if it was soon to lapse.
Where did you apply the first time? The answer for renewals is always immigration for your area.
Yes you’ll go to the regional immigration office once to turn in your documents, and once again to pick up the new residence card when you get the postcard notifying you it’s ready.
I just renewed mine a couple months ago, it didn’t take long to process, maybe around three weeks. And I got a five year! (To be fair I should have applied for PR by now.)
I’m guessing each situation is different depending on your documentation, your spouse’s circumstances etc.
Also your wait time at the office will vary depending on the area you live in. The one for my area is inconveniently located, but once you get there not too busy, so both visits were only about 30 minutes.
