Shiro miso carbonara udon from Mametaku [Tokyo]


I’ve mentioned it in some other threads about Japanese fusion foods, but never had a photo. This is from the izakaya Mametaku [GM] [TL] in Ebaramachi, Shinagawa, Tokyo.

I’m sure it uses bacon rather than pancetta or guanciale, but it’s delicious and that’s what really matters.
