Hoshigaki Questions


Hi! I have been drying hachiya persimmons for the last month. I’ve had some issues with mold. In total, I probably tossed a dozen which kept presenting mold and were not drying as well. I have about a dozen now that are almost ready to be taken down and eaten! However, some of these I also had multiple issues with mold (but it was much easier to control). I ended up brushing the mold off with a dry pastry brush and then brushing the fruit with whiskey. Sometimes small spots of mold came back, and I repeated the process before it got out of my control.

In the last week or two there have been no signs of mold, but they are beginning to have their sugar blooms! Wondering if anyone here had similar experiences, and if these are still safe to eat despite the mold? I would love to give these out for the holidays, but do not want to get anyone sick!
