What type of noodles are these?


We went to this ramen soup, Mendori Hyakkei, and want to know what type of noodles these are.

The chef said “thin udon” but might have said that because our Japanese was limited. On Tabelog reviewers said it was a soba noodle, but with such a light color I was unsure.

The noodles weren’t too bouncy and they recommended you eat quick (low hydration?)

I experiment with noodle making and want to try and get as close as possible.
