I’m currently based in Kagoshima, but while visiting Iwakuni in Yamaguchi Prefecture, I came across this fascinating dish called Kawara Soba.
It’s made by grilling green tea soba noodles on a heated roof tile, topped with beef, lemon, and grated daikon. The sizzle, aroma, and texture made it an unforgettable experience.
