This recipe looks very good. However I'd like some input on 3 things:
1) Are they using dry or sweet red wine? (10:01) https://youtu.be/tqaFw11BJXs?list=LL&t=601
2) Since I do not have the premade roux they use I'd use something like the following:
Turmeric 7g
Allspice 5g
Garam masala 5g
Cumin 5g
Coriander 5g
Mustard powder 2g
Nutmeg 3g
Bay leaf 1 piece
+ 40g flout, butter
Shamelessly stolen from George ジョージ Curry recipe. Interestingly it does not contain Katsuri Methi which I've seen quite often included. Cocoa Powder is the secret ingredient and will be added as well. I'd like some input on that if anyone has good ideas.
3) They did not caramelize the onions. I thought pretty much all Curry recipes require this step?
BTW they added rosemary. That's a first for me. Should turn out interesting at least.
