I recently came into a large amount of prepared burdock root. I know I like gobo, although I usually only have it as a maki roll, or as a side dish in a bento. Are there any other uses for it I'm missing? Either dishes that use it, or just foods that pair well with it? I like gobo salad, but I believe that uses fresh burdock which is different.

You can use them for stir fries if you have large quantity of them (unconventional but hey, it works) . Freeze them if you can’t use them fast enough.

Make salmon skin roll and put a long one in. My favorite way to eat gobo pickles
I think you could maybe put it in kakiage?
The sushi place I frequent tosses in some burdock root in their chirashi.
