First time making hoshigaki and I'm really excited about it but have a few questions:
-How soon will the bloom appear?
-Wgat is your "massaging" technique? I read you're not supposed to squeeze it.
-When should they start to turn a darker color?

“Squeeze” probably means different things to different people. I think they just mean don’t squeeze hard.
The bloom timing depends, are you spraying them with shochu or some other alcohol? If so then 3 weeks or more. They will continue to cure and bloom even after they have sufficiently dried, so you don’t necessarily have to hang them until they bloom.
