

When visiting Japan it was common to have gyoza served crispy side up and connected with a crust. Been doing it at home lately and the family enjoys the fun presentation.
To do it, make frozen gyoza in pan but instead of adding just water to steam-fry, add the following mixture:
mix 1/2 cup water + 2Tb flour + 1Tb oil
Cover and steam for 6-7 minutes then uncover and let crust brown. Move pan around on burner to get an even crust if using a large pan.

Lived in Japan for a few years and I make gyoza often but haven’t found the crispy goodness yet.
