

I had a really delicious dark curry in Japan and couldn’t stop thinking about it so I tried to recreate it at home. This time I tried adding some extra ingredients to develop darker colors and deeper flavors in the sauce. It tasted soo much better than normal.
Here’s my “secret” ingredients:
– Korean black bean sauce
– Better than bouillon roasted beef stock
– Valhrona chocolate powder
– Instant coffee
– Orange marmalade
I added the black bean sauce near the beginning to sautĂ© the onions and beef, then added beef stock water from better than bouillon paste. After pressure cooking the meat and onions, I added potatoes and carrots and cooked a little longer, then I added the chocolate powder, coffee powder and orange marmalade – just a little bit of each, I did go heavier on the chocolate powder though.
I’m sure there’s a lot of other variations on this recipe but just wanted to share what worked for me! The fun part is that all the extra ingredients were stuff that I already had in my pantry 🙂
