I ordered a mushroom soup at a Japanese restaurant, it was insanely good. The exact description was “chicken broth, mushrooms, scallion, fried onions” but the umami taste was out of this world. I could probably live off of this soup forever. It almost tasted like a fish chowder so I’m assuming they add a fish sauce or something else. If anyone has any idea of a more accurate name or a recipe please let me know!
