I have a Tori Karaage Don at this one Japanese restaurant. I love their sauce on the don. I asked the restaurant but they just said it’s “spicy sauce”.
I have a few photos of the sauce. And I also have a few notes on what I observed about it.
Description:
Smell
– Smells like naruto. Fishy. Maybe fish sauce. Maybe oyster? Could be the chilli bean paste fermented stuff.
– Very fine bits of chilli.
Sight
– Small bits of red chilli
– Sesame seed
– Soy sauce
– More viscous thank soy sauce. Not as viscous as sriracha.
Taste
– Initial sweet taste. Could be brown sugar. Could be honey. Could be just mirin.
– Spice at back of throat.
– Soy sauce.
– Bit of bitterness
– Little acidic
Could be a spicy honey soy sauce?
