Ohhh I want to know as well. Mutekiya is one of my favorite places for ramen.
Quick google search and there seem to be a few “Nori Print” companies that print on seaweed.
The white “ink” is apparently a mix of egg white , some type of calcium such as dairy, and potato starch.
They print on the Nori using specialized “food printers”.
This place is soo good
