My new favorite condiment

  1. I’ve been experimenting with my 3-ingredient sushi vinegar, and I think it might be my favorite condiment at the moment. It makes incredible sushi rice, but it’s also a fantastic way to season:
    1. Cucumber sunomono – Thinly slice cucumbers and rub them with salt. Let it sweat, and then squeeze out the water until the slices are translucent. Dress with sushi vinegar. 
    2. Chicken nanbanzuke – Shred carrots and thinly sliced sweet onions and mix in a good amount of sushi vinegar. Dump the mixture on top of leftover Karaage and give it 10-15 minutes for the flavors to mingle. 
    3. Japanese Potato Salad – boiled potatoes and carrots with ham, cucumbers, corn, etc., mixed with Kewpie and a splash of sushi vinegar.

  2. I could eat sushi rice all day! A conglomerate of fluffy little pillows, slightly sour, tangy, and sweet. Yum 🤤 Thanks for sharing your sushi vinegar recipe.
