What are you thinking about Babish’s Tonkatsu Sauce recipe based on fresh fruit & veg?

He uses: Carrots, Apple, Onion, Tomato; all Fresh, dried prunes. Then Rice Vinegar, soy sauce and lots of Worcester sauce. Cook. Blend. Strain.

I did read through many recipes and everyone uses ketchup/BBQ sauce as a base. This is the first one where one uses fresh ingredients.

I'd like some thoughts on how close this might be to the e.g. Bulldog Tonkatsu Sauce.
