I made sushi for the first time today


My first step into japanese cuisine as an indian

I know there are some Japanese people here… i know it might not look perfect, I made rolls a bit loose… Criticism welcome…… Also please recommend some good vegetarian dishes I can try in the future (that is very limiting ik)

  1. You should try making Japanese curry to see how it compares to Indian curry! Or maybe nasu dengaku (miso eggplant)!

  2. There’s still much to improve, although I recognize this is your first time. For starters, the insides are coming apart (can already see it when zooming in your pic). This is a rookie mistake, but one that with practice, you will be able to master, I’m sure.

    Try next time making the surface of the rice more “even”/“flatter”, previous to placing the veggies before rolling it. That will also allow that while mid-rolling, you can exert more pressure (without crushing it LOL, don’t go overboard) so that in the center the fillings will come out evenly.

    Lastly, as an additional tip, if you’re going for veggie options but feel stifled by / want to go around the limitations: cream cheese and cucumber, sweet corn mayo salad, or egg (research “Tamagoyaki”, you can find veggie-friendly adjustments for it with a little research) fillings are staples for “vegetarian” sushi in Japan.

    For sushi:

    Tamago nigiri (just make sure to choose a vegetarian dashi option to go in the tamago)
    Inari sushi
    Avocado rolls
    Cucumber rolls

    For some other vegetarian ideas:

    Homemade miso ramen (again, just choose a vegetarian recipe), such as — https://www.justonecookbook.com/vegetarian-ramen/
    Miso soup (again, picking a recipe without fish, of course)
    Vegetable tempura and rice
    Vegetable gyoza
    Soba noodle salad
    Yaki onigiri or umeboshi onigiri
    Nasu dengaku (miso eggplant)
    I am sure you can find a vegetarian okonomiyaki recipe
    Broadly, check out shojin ryori (Buddhist cuisine)

    I don’t know how easy this would be to access in India, but there are also several English-language vegetarian Japanese cookbooks including:

    Kansha: Celebrating Japan’s Vegan and Vegetarian Traditions by Elizabeth Andoh
    Japan: The Vegetarian Cookbook by Nancy Singleton Hachisu
    Vegan JapanEasy by Tim Anderson

    (I don’t have any of those specific books but I do have other books by all those authors.)
