Iβm currently based in Kagoshima, but while visiting Iwakuni in Yamaguchi Prefecture, I came across this fascinating dish called Kawara Soba.
Itβs made by grilling green tea soba noodles on a heated roof tile, topped with beef, lemon, and grated daikon. The sizzle, aroma, and texture made it an unforgettable experience.
I wrote a short essay reflecting on the moment β not just the food, but the memory behind it.

Has anyone else tried this before? Or do you have a favorite regional dish in Japan?
