Japanese keema (dry) curry with egg

This is a homemade keema curry, broadly based on u/norecipes recipe: https://norecipes.com/keema-curry-japanese-dry-curry/

I used a packet of S&B dry curry mix obtained in Japan, as well as the usual red can S&B curry and some garam masala. Caramelized finely chopped onion and carrot (a bit of garlic and ginger as well), added a mix of ground beef and pork, some crushed tomatoes, ketchup, tonkatsu sauce and soy, and cooked down for about an hour until liquids were all evaporated and the remainder was dry.
