Beginner miso soup!

Ingredients:

4 cups water

1 to 1¼ tsp Hondashi (reduce slightly since you’re increasing miso)

10 oz silken tofu, gently cubed

1–2 tbsp dried wakame

4 tbsp white miso paste

2 green onions, sliced

Instructions:

Make the broth

Bring 4 cups water to a gentle simmer.

Add Hondashi.

Add wakame

Let it hydrate about 1 minute.

Add silken tofu

Lower heat. Slide tofu in gently. Warm 2–3 minutes. Do not stir aggressively.

Add miso (critical) Turn heat to LOW. In a bowl, whisk all 4 tablespoons miso with a ladle of hot broth until completely smooth. Pour back into pot and gently swirl. Do not boil.

Finish

Add green onions and taste.
