  1. To me, this looks like tonkotsu ramen, but apparently it’s called tonkatsu.

  2. You made a typo in your title. You wrote ‘tonkatsu’, not ‘tonkotsu’.

Kurume is a great place and the food is solid.

  3. This tonkatsu appears to be extremely watery and undercooked. The pork needs to be breaded and fried before it’s safe to eat.

Lol sorry everyone’s busting your balls on the spelling error; but as you’ve might have realized, tontastu is breaded fried pork, and tonkotsu is a style of pork bone broth ramen. “Ton” means pork, “katsu” means breaded fried, and “kostu” means bone. It’s common for native English speakers to confuse tonkatsu and tonkotsu, as there is only a one letter difference.

Regardless, this bowl looks incredible! I hope it was as delicious as it looks. Since you’re close to Kumamoto, I hope you get to try the ramen there too

  4. Thank you for not dunking your chopsticks into the soup before taking the photo. I don’t get why people do that so often.
