Is this the correct ‘Akasu’ rice vinegar to use for Nigiri?

  1. I’ve never been to high-end sushi places, but it seems like you’re right. The brown sushi rice you see in those places is called “Aka Shari” and, apparently, makes fish taste better. Now I’d like to buy a bottle myself.
